Skylark Hospitality is recruiting on behalf of a client for an experienced Bar Manager to join a distinctive premium hospitality destination in the heart of Central London.

Set across multiple floors, the venue brings together refined dining, expertly crafted cocktails, live music and late-night entertainment. With a strong focus on atmosphere, service and guest experience, this is an opportunity for an accomplished bar professional to take ownership of a high-profile operation within one of London’s most competitive hospitality markets.

The Role

As Bar Manager, you will take full responsibility for the day-to-day bar operation, leading from the floor and ensuring consistently high standards across drinks, service and guest experience.

You will work closely with the venue’s senior management team while developing and motivating a strong bar team and maintaining the personality and energy of the operation.

Key responsibilities will include:

• Leading and developing the bar team through hands-on management, coaching and training

• Maintaining exceptional standards of service and drinks execution

• Overseeing cocktail preparation, presentation and consistency

• Contributing to the development of seasonal cocktails and the wider beverage offering

• Managing stock, ordering, inventory and beverage cost control

• Monitoring labour and operational costs and contributing to overall profitability

• Maintaining strong relationships with suppliers and beverage partners

• Ensuring licensing, health & safety and operational standards are consistently met

• Creating a positive, professional and high-performing team culture

• Remaining highly visible during service and ensuring an engaging guest experience

About You

We are looking for a confident hospitality professional with:

• Previous Bar Manager or senior bar management experience within a premium restaurant, luxury hotel, high-end cocktail bar or lifestyle hospitality environment

• Excellent knowledge of cocktails, spirits, wine and premium beverages

• Strong leadership skills with the ability to motivate, train and retain a diverse team

• Commercial awareness, including experience with stock control, beverage margins, labour management and P&L accountability

• A genuine passion for hospitality and guest experience

• Strong organisational skills and attention to detail

• The confidence and personality to lead a busy, high-energy operation

• Experience within a late-night, entertainment-led or high-volume premium environment would be advantageous
